Ingredients
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 1/2 teaspoon dried orange peel
- 1 1/2 cup flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/8 teaspoon ginger
- 1 cup zucchini, grated Skin can be left on for more color or removed, your choice.
- 1/2 cup pecans or walnuts *optional

Instructions
- In a large bowl, beat sugar and oil until blended. Add eggs and orange peel and beat until blended.
- Sift together flour, baking powder, baking soda, salt, nutmeg, and ginger.
- Add approximately 1/2 cup dry ingredients to the sugar-oil mixture, alternating with 1/3 cup zucchini, stir in between additions, until all ingredients are in the same bowl. Stir until combined. Stir in nuts.
- Pour into greased 9 1/2 x 5 x 3" loaf pan.
- Bake in preheated 375 degree oven for 55 minutes or until done. Cool on a rack.
