In a large bowl, beat sugar and oil until blended. Add eggs and orange peel and beat until blended.
Sift together flour, baking powder, baking soda, salt, nutmeg, and ginger.
Add approximately 1/2 cup dry ingredients to the sugar-oil mixture, alternating with 1/3 cup zucchini, stir in between additions, until all ingredients are in the same bowl. Stir until combined. Stir in nuts.
Pour into greased 9 1/2 x 5 x 3" loaf pan.
Bake in preheated 375 degree oven for 55 minutes or until done. Cool on a rack.
